5 Quick and Easy Weekday Dinners

I am NOT a Food Blogger, but I AM a busy mom who needs to put dinner on the table every night. I thought it’d be helpful to share my Go-To Healthy Dinners for the Family! Most of these meals have been inspired by my favorite food bloggers or cookbooks! All of these dishes are kid-friendly, include lots of healthy ingredients AND are easy to make! And because busy moms don’t have time to measure, I’m not going to include portions of the ingredients. You can’t screw these dishes up. Just add more of what you like and less of what you don’t! Also, these are all my own pictures. I did not take them with the intention of blogging, so please forgive me!

Crockpot Mexican Taco Skillet
or
One Pan Fajitas

Taco Skillet

Ground Beef or Turkey
Black Beans
Peppers
Onion
Corn
Diced Tomatos
Chili Powder, Cumin, Garlic Powder
Chicken Broth

Ground meat before adding to slow cooker. Cook on low for 4-6 hours.

Top with Cilantro, Avocado and Cheese
***add quinoa for extra protein

Fajitas

Chicken
Onion
Peppers
Chili Powder, Ground Cumin, Garlic Powder
Olive Oil

Bake at 350 for 45 minutes
Serve on Tortillas and Top with Cheese and Plain Greek Yogurt

Ground Turkey Sweet Potato Skillet

Ground Turkey
Sweet Potato
Yellow Pepper
Garlic
Onion
Salt, Pepper & Parsley

You can cook all the ingredients in one pan on the stove top!
Top with Mozzarella Cheese or Spinach and a Fried Egg

Chicken Stir Fry

Chicken Breast
Vegetables (Any that you like and have): Peppers, Mushrooms, Snow Peas, Green Beans, Asparagus, Broccoli, Carrots, Onion
Brown or White Rice
Sauce: Low Sodium Soy Sauce, Honey, Garlic, Salt & Pepper, Chicken Broth, and Cornstarch

Cook Chicken and Saute Vegetables, then add the sauce!

Chili

Ground Turkey
Black Beans
Red Kidney Beans
Peppers
Onion
Diced Tomato
Tomato Sauce & Paste
Chili Powder and Salt & Pepper

You can make this in the crock pot or on the stove top! Serve with plain greek yogurt and cheese!

Harvest Chicken Sheet Pan

Chicken or Sausage
Brussel Sprouts
Apples
Sweet Potatoes
Purple Onion

Olive Oil, Garlic, Rosemary, Cinnamon, Salt & Pepper
Mix all Together and Bake at 425 Degrees until done!
